Cambodia

Cambodia is where Payana begins. Markets before the heat sets in, rivers that double as roads, kitchens that have cooked the same dishes for generations and never once for a camera. This isn't a fixed itinerary handed to everyone who signs up — every journey is shaped around the traveller.

A day might begin before the heat does, with a market stall owner setting out whatever came in that morning, and slow into an afternoon on the water, where the river does the work a road would do elsewhere. Evenings tend to end at a table, because that's usually where the day was heading anyway. None of it is fixed in advance — the shape of each day is worked out around the traveller in it, not handed down from a printed schedule.
